Recipe | Mongolian lamb and onions noodles
Ingredients (serves 2):
2 packets instant noodles
200 g thinly-sliced lamb
1 small brown onion, thinly sliced
1 red or yellow pepper, thinly sliced
Method:
1. Boil the water and prepare the noodles according to packet instructions.
2. Heat a little oil in a non-stick pan and fry the onions until they caramelize, about a minute on high heat. Just watch the pan so they do not burn.
3. Add the lamb and pepper and toss with a chopstick. Season with salt and pepper to taste.
4. Divide the noodles into two bowls and add the lamb and onions.
Food note:
Supermarkets have wafer-cut lamb slices that are meant for hot pots. They are already frozen, but are good to use straight from the chiller because they are cut so thin.
