Dakos - Cretan koukouvagia
Ingredients:
1 barley rusk
6 tbsp of extra virgin olive oil
2 large, ripe tomatoes, peeled and grated
1 cup of feta or mizithra cheese, grated salt to taste
Method:
1. Dip the rusk in water to soak and let it stand to drain.
2. Sprinkle it with olive oil and allow the oil to seep into the rusk.
3. Salt according to the saltiness of the cheese.
4. Top with the grated cheese and add the grated feta or mizithra cheese. Serve immediately.
