The Ritz-Carlton, Shenzhen's Italian restaurant Paletto truly goes the distance - even all the way to Italy - to bring the best in authentic Mediterranean meals.

The eatery, nominated among 2010's Top 5 Restaurants by Hotels Magazine, is the first to bring to Shenzhen the soft and creamy Brratta cheese from southern Italy's Puglia region. It is also the first to bring to town white truffles and such other exotic ingredients as chestnut flour, homemade whole-wheat pasta and black squid-ink pasta, the hotel's executive chef Steve Grein says.

The restaurant also stocks the best free-range black pork produced by Beijing farmers, reflecting a real dedication to providing the best of the best for its customers. Guests are offered a gourmet selection of traditional Italian foods, including pasta, spaghetti, antipasti and pizza, Grein says.

While Paletto pays utmost attention to authenticity, it will tweak meals according to local tastes, and chefs are willing to consult with guests to ensure they get exactly the dining experience they seek, Grein says.

The team is innovative in adding Italian elements into popular local foodstuffs, such as seafood. It also includes twists of texture, flavor, garnish and presentation, and can prepare small portions.

The authentic and innovative Italian cuisine and fine wines are served in a relaxed yet refined ambiance ideal for intimate gatherings or special celebrations. It's an ideal venue for social or business gatherings, Grein says.

"You just need to sit back, feel relaxed and comfortable, and enjoy your food," he says.

Paletto seats 60 with a private room. Opening Hours are 12-2:30 pm for lunch, 6-11 pm for dinner.
