Jack Zhen wants to perfect the Beef Wellington
A 1,000 square-meter "Steak House" recently opened on the trendy Top Win Center at Sanlitun. Although the restaurant didn't seem to have put a lot effort into its name, they do know how to do the steaks and everything else right.
Jack Zhen, the executive chef, wants to make Beef Wellington the signature dish of the restaurant.
The ancient, traditional British dish could be a challenge for even the best chefs. Using lean beef filet instead of the fatter rib eye and sirloin, the dish requires the chef to be very precise in every step so the meat inside doesn't turn dry.
Although we think that Jack Zhen has done quite a good job, he is still very eager to get feedback from customers to improve the recipe. Do him a favor by offering advice to any service staff if you dine there. Steak House, 3F,
