Lanzhou beef noodle is a well-known characteristic Lanzhou dish where all the noodles are manually drawn out and is also known as Hand-Pulled Noodle. It originated in the Tang Dynasty and has won over domestic and international customers with its unique taste and pleasant color; it is listed by the China cooking association as one of China's three major fast foods. In 1999, Lanzhou Hand-Pulled Noodle, along with Beijing Quanjude Roast Duck and Tianjin Goubuli steamed bun, was identified as one of the three major Chinese fast-food varieties to be promoted.
