Top restaurants flaunt their truffles

Aquerello rice
This risotto is a sensory fugue, with chef Turco's own fermented rice and burnt white chocolate supporting the power of the white truffle. It's part of a six-course set menu that's 1,988 yuan ($294) plus 15 percent service charge, which will be offered through December or as long as the truffles are available. Guests can also request truffles on any dishes they like (add 688 yuan for 4g).
