Carotenoids can increase protection against free-radical damage from sun exposure, especially when combined with vitamin E.

Vitamins C and E can reduce the sunburn reaction to ultraviolet-B radiation, and keep the skin hydrated and fair.  

Fruits and vegetables that are rich with those nutrients:

Almonds have vitamin E, omega-3 fats, protein, calcium and zinc, and other nutrients to keep skin looking healthy.

Carrots are one of the best food sources for carotene, and they also contain vitamin C and other nutrients.

Sweet potatoes, tomatoes, carrots, spinach and pumpkin are great sources for carotenoids. In fact, dark-colored foods, such as orange-colored fruits and vegetables, are often rich in carotenoids.

Broccoli is rich in vitamin C, carotenoids, and dietary fiber.  

Soybeans have a lot of vitamin E. 

Kiwi fruit and lemon have a lot of vitamin C.
