With the goal of adding a fresh new flavor to the thriving culinary market in Beijing, renowned French three-Michelin-Starred Chef Yannick Alleno opened his new restaurant - S.T.A.Y. - at Shangri-La Hotel, Beijing in September last year.

Yannick, founder and head of the France-based parent company of S.T.A.Y, visits China at least every three months to study the local market and clients.

"I change my menus every season. This new summer menu is all about seasonal products," Yannick said.

The summer menu includes the classic fennel soup, the heart of romaine and crispy vegetables salad and dame blanche ice cream.

For those who want to try the ingenious French taste, Yannick recommended the Pastry Library for the desserts.

"The Pastry Library is another innovation of the restaurant that provides an interactive venue for diners and chefs," Yannick said.

"This is a place where the chefs work in an open kitchen, and clients can even participate in the final process by choosing a topping for the dessert," he added.

Yannick noted that another attractive thing about S.T.A.Y. is the "Communal Table", which allows up to 12 persons to dine and have passionate conversations around a big table.

Yannick also recommended the brunch buffet, with three series and four options in each series. There are also various desserts for clients to select.

"The restaurant mixes simplicity and modernity to create a casual and friendly atmosphere where guests share a unique culinary experience," Yannick said.

Yannick has earned a total of five Michelin stars for two French restaurants he has worked with, with three won in 2007 and the other two awarded in 2010.
