| Spicy Ginger Apple PuddingIngredients (serves 4):
3 large apples, peeled and thickly sliced
100 g butter
100 g dark brown sugar
100 g all-purpose flour
1 tsp baking powder
2 eggs
50 g raisins
Juice of 1 lemon
1 tsp five-spice powder
1 heaped tbsp grated ginger
Method:
1. Generously butter an oven-proof dish. Add the thickly sliced apple on top and drizzle with lemon juice. Add raisins, distributing evenly over the apples. Mix in the grated ginger.
2. Beat butter and sugar together until very pale and creamy. Beat in the eggs one at a time.
3. Sift flour, baking powder, five-spice powder together and add to the butter and egg mixture.
4. Spoon the batter over the apples and smooth the top.
5. Bake for 45 to 50 minutes until sponge bounces back at the touch.
6. Serve hot with a drizzle of honey and a dollop of fresh cream. But it's also good on its own.
