Stewed to success

Combining modern decor with traditional Chinese cooking, Tang Stew House specializes in smoked meats, stewed dishes and spicy seafood. After being steamed, boiled or fried, the meat will be smoked with bits of wood, tea leaves, cypress branches, bamboo leaves, peanut shells and sugar to give them a fresh smell and smoky flavor. Steaming is one skill the restaurant excels at, which looks easier than it is to perfect. Soybean paste adds a fresh and salty flavor to the meat when steamed together with fish, as the rich flavor of the sauce seeps into each bite.
